Risoni Pasta Salad
Pasta salad can make a wonderful lunch. More substantial than a garden salad, yet still cool and light, pasta salad has the best of both worlds.

Ingredients
- 1cup risoni pasta
- 2 tomato, chopped
- 1 lebanese cucumber, chopped
- 1 carrot, grated
- 2 slices lean ham
- 2 mushrooms, chopped
- 1/2 cup orange juice
- 2 tbsp. sweet chili sauce
Method
- 1Bring medium saucepan of water to the boil.
- 2Add the risoni and cook until al dente, approx 5 mins.
- 3Drain and let cool.
- 4Lightly stir through tomato, cucumber, carrot, mushrooms and ham. Mix orange juice and sweet chilli sauce together and combine with pasta.
