Risoni Pasta Salad

Pasta salad can make a wonderful lunch. More substantial than a garden salad, yet still cool and light, pasta salad has the best of both worlds.

Ingredients

  • 1cup risoni pasta
  • 2 tomato, chopped
  • 1 lebanese cucumber, chopped
  • 1 carrot, grated
  • 2 slices lean ham
  • 2 mushrooms, chopped
  • 1/2 cup orange juice
  • 2 tbsp. sweet chili sauce

Method

  1. 1Bring medium saucepan of water to the boil.
  2. 2Add the risoni and cook until al dente, approx 5 mins.
  3. 3Drain and let cool.
  4. 4Lightly stir through tomato, cucumber, carrot, mushrooms and ham. Mix orange juice and sweet chilli sauce together and combine with pasta.
