Ingredients
- 1 tbsp. peanut oil
- 250g pork mince (or chicken mince)
- 1/2 onion finely diced
- 1 spring onion, sliced
- 2 tbsp. water chestnuts drained and chopped
- 1 tbsp. hoi sin sauce
- 2 tbsp. soy sauce, light
- 1 clove garlic, crushed
- 1 tbsp. sweet chilli sauce
- 1 tsp. ginger crushed
- 1 red chilli or chilli paste
- 4 lettuce cups, washed
Method
- 1Heat a large pan or wok on high with peanut oil.
- 2Saute onion for 5 mins then add mince, breaking up the mince so all seperated.
- 3Add chestnuts, hoisin, soy and sweet chilli sauce, garlic and ginger, and chilli stir frying until all incorporated, a few minutes.
- 4Take apart whole lettuce leaves carefully, and fill each cup with mixture.
- 5Serve immediately, garnish with spring onions on top.
