Option to swap pork for chicken or duck, both would be great. You can also add some diced capsicum when you cook the onion. If you can't find water chestnuts then just use bean sprouts, that will give some crunch to the dish This recipe is low sugar, low carb and a good source of protein.

Ingredients

  • 1 tbsp. peanut oil
  • 250g pork mince (or chicken mince)
  • 1/2 onion finely diced
  • 1 spring onion, sliced
  • 2 tbsp. water chestnuts drained and chopped
  • 1 tbsp. hoi sin sauce
  • 2 tbsp. soy sauce, light
  • 1 clove garlic, crushed
  • 1 tbsp. sweet chilli sauce
  • 1 tsp. ginger crushed
  • 1 red chilli or chilli paste
  • 4 lettuce cups, washed

Method

  1. 1Heat a large pan or wok on high with peanut oil.
  2. 2Saute onion for 5 mins then add mince, breaking up the mince so all seperated.
  3. 3Add chestnuts, hoisin, soy and sweet chilli sauce, garlic and ginger, and chilli stir frying until all incorporated, a few minutes.
  4. 4Take apart whole lettuce leaves carefully, and fill each cup with mixture.
  5. 5Serve immediately, garnish with spring onions on top.
