Tuna Fritters

These fritters make a delicious lunch served with salad and a dollop of relish or Greek yoghurt.

Ingredients

  • 200g tuna (about 300g can drained)
  • ½ cup plain flour
  • ½ tsp. baking powder
  • Sprinkle paprika
  • 1 spring onion, sliced
  • ¼ cup milk
  • 1 clove garlic, crushed
  • 1 tsp. Dijon mustard
  • ½ cup corn
  • Cooking spray

Method

  1. 1In a mixing bowl place all your ingredients and mix until combined.
  2. 2Heat a non-stick fry pan that has been sprayed with cooking spray and place scoops of the mixture into pan. Cook a couple of minutes each side.
  3. 3Add a dollop of relish or Greek yoghurt and serve with a side salad for a great lunch.
