Apple & Blueberry Strudel

This is a healthy spin on the traditional strudel which is usually loaded with calories and fat.

Apple & Blueberry Strudel

Ingredients

  • 2 apples, peeled, cored and chopped
  • 50g fresh blueberries
  • Pinch of cinnamon
  • 6 sheets filo pastry
  • 2 tsp. brown sugar
  • 4 dollops of Greek yoghurt to serve (optional)
  • Cooking spray

Method

  1. 1Preheat oven to 180C.
  2. 2Place your chopped apples into a mixing bowl. Add blueberries, cinnamon, brown sugar and mix so all coated with sugar.
  3. 3Layout a sheet of filo pastry onto your clean bench. Quickly spray with cooking spray and repeat with another sheet, spray then lay another sheet. Place half the apple mixture onto pastry, towards the end so you can roll up as a parcel. Repeat process with the remaining pastry and mixture.
  4. 4Line a baking tray with baking paper and place strudel onto tray and quickly spray the top with spray.
  5. 5Bake in oven for approx. 15 minutes or until pastry has browned. Take out and let cool for a few minutes. Slice in half, on an angle and place each half onto a plate.
  6. 6Serve with a dollop of Greek yoghurt if desired.
