Chicken & Mushroom Fettuccini

Ingredients
- 200g fettuccini cooked as per instructions
- 8 button mushrooms, sliced
- 1 chicken breast, diced
- 2 cloves garlic, crushed
- 1 can evaporated milk, light
- 1 onion, sliced
- 1-2 tbsp. fresh parsley chopped
- 1 tsp. olive oil
Method
- 1Cook pasta as per instructions.
- 2Heat pan on medium heat and add onion cooking until softened but not burnt.
- 3Add diced chicken stirring until browned.
- 4Add garlic and mushrooms stirring for a couple of minutes until mushrooms have softened.
- 5Add Evaporated Milk, lots of pepper and a little salt, turn down heat so simmering and reducing liquid, approx 3 minutes.
- 6Add parsley and pasta stirring to incorporate all the flavours.
- 7Serve immediately, option to add Parmesan Cheese on top.
