Chicken Caprese
This is a lovely Italian inspired dish you are sure to enjoy. Fresh, easy & quick to make, its an ideal after work dish.

Ingredients
- 2 chicken breasts
- 1 can diced tomatoes
- 1 tbsp. olive oil
- 1 onion diced
- 2 cloves garlic
- 1 punnet cherry tomatoes, halved
- 1 tbsp. tomato paste
- 1/2 cup white wine
- 1/2 cup water
- 1/2 cup olives
- Handful fresh basil
Method
- 1In a large non-stick frypan heat olive oil and sauté onion on low heat for 10 mins until softened.
- 2Add garlic then wine and cook for 30 seconds.
- 3Move onions to one side of pan and add chicken breast and cook for 5-8 mins each side depending on the thickness of the chicken. Add cherry tomatoes, canned tomatoes, tomato paste, water, olives and season with salt and pepper; place lid on turn down heat and simmer for 5 mins. Add basil leaves that have been torn and continue to simmer until everything is cooked.
- 4Serve with a fresh side salad.
