Chicken Spinach Brie Focaccia

Ingredients

  • 1 small (100g) focaccia or turkish bread
  • 1/2 chicken breast, shredded
  • 1/2 tomato, sliced
  • Handful baby spinach leaves
  • 20g brie, sliced thinly
  • Squeeze lime
  • S & P to taste
  • 1 tbsp. light mayonnaise

Method

  1. 1Slice focaccia in half and arrange on plate or platter
  2. 2Grill chicken breast under griller for 10 min or until cooked through. Slice thinly
  3. 3Place spinach leaves on bottom of focaccia, then tomato, chicken slices and brie
  4. 4Serve immediately or on a cold winters day, put into a sandwich press / maker and cook until golden brown.
