Ingredients
- 1 small (100g) focaccia or turkish bread
- 1/2 chicken breast, shredded
- 1/2 tomato, sliced
- Handful baby spinach leaves
- 20g brie, sliced thinly
- Squeeze lime
- S & P to taste
- 1 tbsp. light mayonnaise
Method
- 1Slice focaccia in half and arrange on plate or platter
- 2Grill chicken breast under griller for 10 min or until cooked through. Slice thinly
- 3Place spinach leaves on bottom of focaccia, then tomato, chicken slices and brie
- 4Serve immediately or on a cold winters day, put into a sandwich press / maker and cook until golden brown.
