Four Bean Pasta Salad
This goes really well with grilled meat or fish. If you like a little heat, you can add some chilli.

Ingredients
- 8 cherry tomatoes
- ½ cup 4 bean mix, drained and rinsed
- ½ cup corn
- ½ avocado, chopped
- ½ cup dried shell pasta, cooked as per instructions
- ¼ capsicum, diced
- Salt & pepper to taste
- *Dressing
- 2 tbsp. honey
- 2 tbsp. lime juice
- 1 tbsp. olive oil
Method
- 1Place all ingredients except avocado into a large bowl and mix.
- 2Warm honey for 10 seconds in microwave. Add lime juice and olive oil and mix thoroughly. Drizzle dressing over ingredients. Add avocado, season with salt and pepper.
- 3Serve immediately.
