Four Bean Pasta Salad

This goes really well with grilled meat or fish. If you like a little heat, you can add some chilli.

Four Bean Pasta Salad

Ingredients

  • 8 cherry tomatoes
  • ½ cup 4 bean mix, drained and rinsed
  • ½ cup corn
  • ½ avocado, chopped
  • ½ cup dried shell pasta, cooked as per instructions
  • ¼ capsicum, diced
  • Salt & pepper to taste
  • *Dressing
  • 2 tbsp. honey
  • 2 tbsp. lime juice
  • 1 tbsp. olive oil

Method

  1. 1Place all ingredients except avocado into a large bowl and mix.
  2. 2Warm honey for 10 seconds in microwave. Add lime juice and olive oil and mix thoroughly. Drizzle dressing over ingredients. Add avocado, season with salt and pepper.
  3. 3Serve immediately.
