French Beef Casserole

This casserole has great depth of flavour and is loaded up with vegetables.

Ingredients

  • 1kg beef, diced, fully trimmed of fat
  • 2 tbsp. olive oil
  • 1 large zucchini, sliced
  • 3 carrots, sliced
  • 3-4 potatoes, sliced skin on
  • 8-10 medium mushrooms, quartered
  • 3 cup good quality red wine, Shiraz or Cab Sav
  • 2 cup beef stock
  • 2 tsp. rosemary
  • 2 tsp. thyme
  • 4-5 cloves garlic
  • 2 onions, sliced
  • 1 red capsicum, chopped
  • Cracked pepper to taste
  • Salt to taste
  • 2 heaped tbsp. cornflour mixed with ½ cup cold water

Method

  1. 1Turn on your slow cooker.
  2. 2Place your onion, capsicum into the slow cooker.
  3. 3Heat a fry pan with olive oil and sear your meat into 2 or 3 batches, place into slow cooker.
  4. 4Place your wine, stock, garlic, sugar, herbs, season with salt and pepper. Cook on low heat for 4-6 hours.
  5. 5After this time add the potatoes, mushrooms, zucchini, and continue to cook a further 4-6 hours. In the last hour add cornflour mixed with water, stirring in and cook for a little while longer.
  6. 6Any leftovers are suitable to freeze.
