Sausage Cauliflower & Chilli Pasta

Ingredients

  • 2 Sausages (100g), sliced or diced
  • 2 cups Cauliflower, tiny florets
  • 1½ cups dried Pasta, Orecchiette
  • 100g Baby Spinach leaves
  • ½ red Capsicum, chopped
  • 1 Chilli or Chilli Flakes to taste
  • Sprinkle Oregano
  • ½ cup grated Cheese, reduced fat
  • 1 tbsp. grated Parmesan cheese
  • 2 cloves Garlic, crushed
  • 1 tbsp. Olive oil
  • 1 cup Chicken stock, hot
  • Salt & Pepper to taste

Method

  1. 1Cook pasta as per instructions.
  2. 2Heat a non-stick fry pan with olive oil and cook sausages, capsicum, and cauliflower on medium heat.
  3. 3Once cauliflower has softened add garlic spinach, chilli and oregano, stir for a minute until spinach has started to wilt then add cooked pasta. Season with salt and pepper, add stock, a little at a time, you may not need all but it will help keep the mixture moist. Now add grated cheese.
  4. 4Serve immediately with a sprinkle of parmesan cheese.
