Ingredients

  • 1 tortilla, light
  • 1 95g can tuna, drained
  • 1/3 cup corn kernels
  • 2 tbsp. salsa
  • 2 tbsp. cottage cheese
  • 1 tbsp. light mayonnaise
  • 1/2 tomato, diced
  • Salt & pepper to taste

Method

  1. 1Mix together tuna, corn, tomato, mayonnaise and cottage cheese until well combined, season with S & P.
  2. 2Option to heat tortilla up in microwave for approximately 15 seconds on medium heat, otherwise you can leave cold.
  3. 3Place the salsa down the centre of the tortilla.
  4. 4Place tuna mixture over the salsa..
  5. 5Roll up and seal with a toothpick.
  6. 6Carefully cut into pin wheels – you should get about 5 pieces per tortilla.
