Vegetarian Tacos
This is such a great after work dinner; quick & easy to make with loads of vegetables.

Ingredients
- ½ onion, diced
- 1 zucchini diced
- ½ cup baby corn spears, sliced
- ½ cup frozen peas
- 8 medium mushrooms, quartered
- ½ capsicum, red or yellow, sliced
- 1 tomato diced or 10 cherry tomatoes halved
- 1 tbsp. olive oil
- ¼ cup water
- 4 soft mini tacos
- 2 tsp. taco seasoning mix, salt reduced
Method
- 1Heat a non-stick fry pan with olive oil and sauté onion, capsicum, zucchini, mushrooms until cooked, about 5 minutes.
- 2Add peas, tomato, corn spears and taco seasoning mix. Stir then add water, simmering for a few minutes until everything is cooked.
- 3Place 2 taco soft tortillas onto each plate and divide mixture onto each tortilla.
- 4Serve immediately.
