This is such a great after work dinner; quick & easy to make with loads of vegetables.

Vegetarian Tacos

Ingredients

  • ½ onion, diced
  • 1 zucchini diced
  • ½ cup baby corn spears, sliced
  • ½ cup frozen peas
  • 8 medium mushrooms, quartered
  • ½ capsicum, red or yellow, sliced
  • 1 tomato diced or 10 cherry tomatoes halved
  • 1 tbsp. olive oil
  • ¼ cup water
  • 4 soft mini tacos
  • 2 tsp. taco seasoning mix, salt reduced

Method

  1. 1Heat a non-stick fry pan with olive oil and sauté onion, capsicum, zucchini, mushrooms until cooked, about 5 minutes.
  2. 2Add peas, tomato, corn spears and taco seasoning mix. Stir then add water, simmering for a few minutes until everything is cooked.
  3. 3Place 2 taco soft tortillas onto each plate and divide mixture onto each tortilla.
  4. 4Serve immediately.
