Beetroot & Feta Salad

Ingredients

  • 50g Mixed Lettuce
  • 1 can 450g Baby Beets, drained and quarters
  • ½ cup canned cannellini beans, drained and rinsed
  • ¼ cucumber, sliced
  • 2 spring onions, sliced
  • 30g Feta, Greek
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. balsamic vinegar (or red wine vinegar)

Method

  1. 1Place the lettuce leaves on the base of a large plate.
  2. 2Layer the beetroot, beans, cucumber spring onions, and feta on top.
  3. 3Dress with olive oil and vinegar.
  4. 4Season with S & P.
