Ingredients
- 50g Mixed Lettuce
- 1 can 450g Baby Beets, drained and quarters
- ½ cup canned cannellini beans, drained and rinsed
- ¼ cucumber, sliced
- 2 spring onions, sliced
- 30g Feta, Greek
- 1 tbsp. extra virgin olive oil
- 1 tbsp. balsamic vinegar (or red wine vinegar)
Method
- 1Place the lettuce leaves on the base of a large plate.
- 2Layer the beetroot, beans, cucumber spring onions, and feta on top.
- 3Dress with olive oil and vinegar.
- 4Season with S & P.
