Ingredients

  • 2 medium potatoes, peeled and cubed
  • 1 bunch broccolini, washed
  • 1 tsp. seeded mustard
  • 2 tbsp. greek yoghurt, light
  • S & P to taste

Method

  1. 1Peel and cube your potatoes, boil until tender, drain and set aside.
  2. 2Blanch broccolini in boiling water and refresh in cold water. Drain and set aside.
  3. 3Mix together seeded mustard and yoghurt in a small bowl until combined.
  4. 4Place potato, broccolini and on serving plate and drizzle with yoghurt mixture.
  5. 5Season with cracked black pepper and serve immediately.
