Pea Soup with Bacon

This quick pea soup will take less than 30 mins to make. We used frozen baby peas which are sweet and easily available but you can use normal frozen peas.

Pea Soup with Bacon

Ingredients

  • 3 cups baby peas, frozen
  • 2 cups beef stock, salt reduced, heated
  • 2 cups hot water
  • 2 carrots, sliced
  • 2 large potatoes peeled and cubed
  • 2 bay leaves
  • 1 large onion, chopped
  • 2 cloves garlic crushed
  • 1 tbsp. olive oil
  • 4 slices short cut bacon, all rind and fat removed
  • Sprinkle of thyme
  • S & P to taste

Method

  1. 1In a large pot heat sauté onion and bacon over med heat for 5-10 mins. Add the garlic and stir for 1 min.
  2. 2Add peas, carrots, potato, bay leaves, then sprinkle a little thyme. Add heated stock and water and bring to the boil. Season with S & P.
  3. 3Simmer for 20-25 mins until potatoes and carrots have softened.
  4. 4When ready, blitz with a hand blender or food processor.
  5. 5Serve immediately.
