Seafood Paella

You can find frozen seafood mix in most supermarkets. If you want to use fresh seafood mix then reduce cooking time by half. Served with your favourite green leafy salad, this dish is perfect for those on a weight loss diet, or for anyone who enjoys tasty seafood dishes.

Ingredients

  • 1 tbsp. olive oil
  • 1/2 onion, diced
  • 2 tomatoes, diced
  • 2 cloves garlic, crushed
  • 1 cup aborio rice
  • 2 cups chicken stock, salt reduced
  • 1/2 chorizo sausage, diced
  • Sprinkle of tumeric
  • Sprinkle of oregano
  • Cracked pepper
  • 200g seafood mix, frozen
  • 100g prawns, frozen
  • 1/2 cup peas, frozen
  • 1/2 lemon squeezed
  • 2 tbsp. chopped parsley
  • 4-6 whole prawns for garnish
  • Green leafy salad, to serve

Method

  1. 1Heat oil in a paella pan or medium non-stick frying pan over medium heat.
  2. 2Add onion and chorizo, saute on low heat for about 5 minutes or until softened. Add rice and garlic and stir to coat grains evenly.
  3. 3Heat your chicken stock and add to pan, stirring. Sprinkle turmeric and oregano, bring to a simmer and reduce heat. Simmer for 15 minutes, stirring occasionally.
  4. 4About 15 mins mark add tomato, seafood and prawns. Mix well to distribute evenly through rice. Cook for further 5-10 minutes or until heated through.
  5. 5Add peas. lemon juice and parsley during the final 5 minutes of cooking seafood. Season with cracked pepper.
  6. 6Serve with a side salad.
