These lettuce cups make a great starter or lunch and are very healthy.

Steak & Mushroom Lettuce Cups

Ingredients

  • 200g steak strips (we used sirloin)
  • ¼ red capsicum, sliced
  • 8 mushrooms, sliced
  • 4 large cos lettuce cups or butter lettuce
  • Chilli, paste or fresh to taste
  • 1 tbsp. olive oil
  • Sprinkle of sesame seeds
  • *Sauce
  • 1 clove garlic, crushed
  • 1 tsp. crushed ginger
  • 1 tbsp. mirin or rice wine vinegar
  • ½ tsp. brown sugar
  • 1 tbsp. soy sauce, salt reduced

Method

  1. 1Layout your lettuce onto your plates, 2 per person. Mix the sauce ingredients in a small dish, set aside.
  2. 2Heat a non-stick frypan with olive oil. Stir fry your onion and capsicum for 2 minutes. Add chilli and mushrooms; continue stirring for a couple more minutes. Take off heat onto a plate.
  3. 3Add the beef now to the frypan stirring for 1 minute, add mushroom mixture and sauce, stirring to combine.
  4. 4Take off heat and divide mixture onto lettuce cups. Sprinkle sesame seeds over.
