If you are vegetarian, omit the bacon and add some tofu if you like. This recipe is low sugar, low carb and high protein.
Ingredients
- 4 eggs
- 1 tbsp. olive oil
- 1 cup sweet potato, grated
- 1/4 cup low fat milk
- 2 slices short cut bacon, diced
- 1/4 onion, sliced
- 50g (handful) fresh baby spinach
- Sprinkle of mixed herbs
- 1/2 garlic, crushed (optional)
- Salt & pepper to taste
Method
- Preheat your oven grill.
- Heat a small frypan on medium heat, add olive oil and sauté onion for 5 minutes. Add bacon and continue cooking until bacon has cooked. Add sweet potato, and season with salt and pepper. Cook for 5 minutes.
- Add spinach, sprinkle herbs, garlic and continue cooking until spinach has cooked down.
- Meanwhile beat eggs, milk and season to taste. Add this to pan and turn down heat. Slowly cook egg, about 5 mins the place under grill to cook the other side.
- Once cooked, serve on a large plate or wooden board, slice into quarters and enjoy!
