Choc Berry Bran Muffins

These muffins are a great way to satify your chocolate cravings. With added bran and natural yoghurt they are a healthy version of other muffins.

Choc Berry Bran Muffins

Ingredients

  • ½ cup frozen raspberries
  • ½ cup frozen blueberries
  • ¼ cup caster sugar
  • 1 egg
  • 3 tbsp. light marg spread (or butter if desired)
  • 1 ¼ cups plain flour
  • 1 tsp. baking powder
  • ¼ cup natural bran
  • 1 tsp. vanilla essence
  • 1 cup low fat natural yoghurt
  • 2 tbsp. chocolate baking chips

Method

  1. 1Preheat oven 180c (350c).
  2. 2Set up 9 patties in a muffin pan.
  3. 3Place margarine and sugar in a bowl and with a mixer cream for 5 mins until paler in colour.
  4. 4Next incorporate the vanilla and egg while mixing.
  5. 5Sift flour and baking powder then turn mixer down low and add flour 1/3 at a time.
  6. 6Add yoghurt then once all mixed, turn mixer off and use a wooden spoon to mix the bran, berries (gently), and then the choc chips.
  7. 7Divide mixture into patties and bake for 20 mins, check to see if cooked in centre, might need an extra 5 mins.
