Choc Berry Bran Muffins
These muffins are a great way to satify your chocolate cravings. With added bran and natural yoghurt they are a healthy version of other muffins.

Ingredients
- ½ cup frozen raspberries
- ½ cup frozen blueberries
- ¼ cup caster sugar
- 1 egg
- 3 tbsp. light marg spread (or butter if desired)
- 1 ¼ cups plain flour
- 1 tsp. baking powder
- ¼ cup natural bran
- 1 tsp. vanilla essence
- 1 cup low fat natural yoghurt
- 2 tbsp. chocolate baking chips
Method
- 1Preheat oven 180c (350c).
- 2Set up 9 patties in a muffin pan.
- 3Place margarine and sugar in a bowl and with a mixer cream for 5 mins until paler in colour.
- 4Next incorporate the vanilla and egg while mixing.
- 5Sift flour and baking powder then turn mixer down low and add flour 1/3 at a time.
- 6Add yoghurt then once all mixed, turn mixer off and use a wooden spoon to mix the bran, berries (gently), and then the choc chips.
- 7Divide mixture into patties and bake for 20 mins, check to see if cooked in centre, might need an extra 5 mins.
