Date & Strawberry Muffins

These cupcakes make a perfect morning tea, fingerfood and are a perfect treat to place in school lunchboxes.Other berries such as raspberries or blueberries can be substituted for strawberries if desired.

Ingredients

  • 1 cup sifted self-raising flour
  • 1 egg
  • 1 tbsp. olive or veg oil
  • ¼ cup milk
  • 4-5 strawberries, chopped
  • 6 dates, chopped
  • Pinch cinnamon
  • ½ cup natural yoghurt

Method

  1. 1Preheat oven 180C. Set up your muffin patties in a muffin pan.
  2. 2Microwave milk for 30 seconds. Add this to chopped dates in a small bowl so dates are soaking and set aside.
  3. 3Sift flour and cinnamon into a mixing bowl. Add egg and oil whilst mixing. Add the date/milk mixture then yoghurt. Add chopped strawberries.
  4. 4Divide mixture into patty pans and bake for 15-20 minutes or until cooked. Check with a skewer in the centre of a muffin.
  5. 5These are very easy and quick to make which makes them perfect for when the kids come home from school and want a snack.
