Green Beans with Bacon
Make sure you don�t overcook the beans; you want them nice and crisp. This recipe is low sugar, low carb, low saturated fat.

Ingredients
- 120g green beans, approx 20, top and tail removed
- 1 slice short cut bacon, diced
- 20g leek, sliced
- 1 tsp. apple cider vinegar
- 1 tsp. seeded mustard
- 1 tbsp. olive oil
- 1/4 cup chicken/vegetable stock or water
Method
- 1Heat a non-stick frypan with 1 tsp. olive oil and cook bacon for a couple of minutes then add remaining oil, add the leek, sauté for 2 more minutes.
- 2Now add beans sautéing for 3-4 minutes so the beans cook. Add the stock or water at this stage to help the beans cook, liquid will evaporate, keep shaking the pan. Season with salt and pepper.
- 3Once beans nearly cooked add the apple cider vinegar and seeded mustard, stirring then keep cooking until cooked to your liking.
- 4Serve immediately.
