Ingredients
- 1/2 onion, sliced
- 2 short cut bacon, diced
- 1 clove garlic, crushed
- 1/2 cup corn
- 2 tbsp. capsicum strips
- 1 tbsp. chives
- 3 eggs
- 1 egg white
- 3 tbsp. low fat milk
- 1/4 cup ricotta, reduced fat
Method
- Preheat oven to 180°C.
- Heat a non stick fry pan, sprayed with a little cooking spray. Cook bacon until brown, set aside. Spray pan again and cook onion for 5 mins. Add water and simmer until liquid has nearly evaporated. Add sugar and cook a further few minutes. Set aside.
- Whisk the eggs, egg white, milk, garlic, and ricotta until all incorporated, season with S & P.
- Spray 2 small baking dishes with cooking spray. On the base place the onion then bacon. Pour half the mixture into each dish. Add the tomatoes, capsicum and garnish with a little chopped chives.
- Cook in oven for approx 30 mins, time will depend on oven.
- Serve with a little side salad.
