Parmesan Crusted Chicken Nuggets

Ingredients
- 2 slices mulitgrain bread
- 3 tbsp. grated parmesan cheese (real cheese, not shelf cheese)
- 2 x skinless chicken fillets, cut into chunks, about 24 bites
- 4 tbsp. greek yoghurt, light
- 1/2 cucumber, grated
- 1 small clove garlic, crushed
- 2 tsp. dried herbs ( or 2 tbsp. fresh herbs)
- Cracked Pepper, to taste
- Cooking spray
Method
- 1Preheat oven to 190C.
- 2Place bread, parmesan, herbs, garlic and cracked pepper into a food processer and blend until resembles fine crumbs.
- 3Place your chicken and breadcrumbs into a large container with lid and shake until the chicken is coated with most of the crumbs.
- 4Place on a baking tray lined with baking paper. Spray with cookin oil and bake for 20 mins or until cooked.
- 5Combine yogurt, cucumber and garlic to make tzatziki. Season to taste.
- 6Serve chicken nuggets with tzatziki.
