Parmesan Crusted Chicken Nuggets

Ingredients

  • 2 slices mulitgrain bread
  • 3 tbsp. grated parmesan cheese (real cheese, not shelf cheese)
  • 2 x skinless chicken fillets, cut into chunks, about 24 bites
  • 4 tbsp. greek yoghurt, light
  • 1/2 cucumber, grated
  • 1 small clove garlic, crushed
  • 2 tsp. dried herbs ( or 2 tbsp. fresh herbs)
  • Cracked Pepper, to taste
  • Cooking spray

Method

  1. 1Preheat oven to 190C.
  2. 2Place bread, parmesan, herbs, garlic and cracked pepper into a food processer and blend until resembles fine crumbs.
  3. 3Place your chicken and breadcrumbs into a large container with lid and shake until the chicken is coated with most of the crumbs.
  4. 4Place on a baking tray lined with baking paper. Spray with cookin oil and bake for 20 mins or until cooked.
  5. 5Combine yogurt, cucumber and garlic to make tzatziki. Season to taste.
  6. 6Serve chicken nuggets with tzatziki.
