Potato Gratin

Low in fat and very tasty, this potato gratin makes a perfect accompaniment to fish, beef, chicken, pork or whatever.

Ingredients

  • 2 large potatoes, sliced thinly
  • 1 clove garlic, crushed
  • 1/2 cup vegetable stock, salt reduced
  • 1/2 cup evaporative milk
  • 1/4 small onion, sliced thinly
  • 1/4 cup tasty cheese, reduced fat
  • Sprinkle of thyme
  • S & P to taste

Method

  1. 1Preheat oven to 180C.
  2. 2In a small oven proof dish for 2 people, layer bottom with sliced potatoes.
  3. 3Spread garlic and half onion over 1st layer of potatoes, season with salt and pepper.
  4. 4Layer remaining potato,then remaining onion, season.
  5. 5In a bowl combine stock and milk and pour over dish.
  6. 6Spread cheese on top with a sprinkle of thyme.
  7. 7Bake for 30 mins until golden brown and tender.
