Pumpkin & Green Lentil Salad

Ingredients
- 1/2 cup green lentils, canned, drained, rinsed
- 2 cups (300g) pumpkin cubed
- 1 tbsp. olive oil
- ¼ teaspoon ground cumin
- ¼ teaspoon paprika
- Handful baby spinach leaves
- S & P to taste
- 15g feta
- Splash balsamic vinegar
Method
- 1Preheat oven 200C. Line an oven tray with baking paper.
- 2Place pumpkin in a bowl, splash a little olive oil over, then sprinkle the cumin, paprika and season with S & P then place on lined oven tray. Bake for 15 mins or until softened, not too soft. Take out and set aside.
- 3In a serving bowl place pumpkin, lentils, spinach and feta, splash with a little balsamic vinegar.
- 4Serve immediately.
