Pumpkin & Green Lentil Salad

Ingredients

  • 1/2 cup green lentils, canned, drained, rinsed
  • 2 cups (300g) pumpkin cubed
  • 1 tbsp. olive oil
  • ¼ teaspoon ground cumin
  • ¼ teaspoon paprika
  • Handful baby spinach leaves
  • S & P to taste
  • 15g feta
  • Splash balsamic vinegar

Method

  1. 1Preheat oven 200C. Line an oven tray with baking paper.
  2. 2Place pumpkin in a bowl, splash a little olive oil over, then sprinkle the cumin, paprika and season with S & P then place on lined oven tray. Bake for 15 mins or until softened, not too soft. Take out and set aside.
  3. 3In a serving bowl place pumpkin, lentils, spinach and feta, splash with a little balsamic vinegar.
  4. 4Serve immediately.
