Ingredients
- 1 cup wholemeal self raising flour, sifted
- 2 tbsp. soft brown sugar
- 1/2 cup low fat milk
- 1 large egg
- 2 heaped tbsp. light margarine spread, melted 30 sec in microwave
- 2 ripe plum, cut into bite size
- 1/4 cup Greek Yoghurt
Method
- 1Preheat oven to 180 degrees (160 degrees fan forced). Place 8 muffin patties into a muffin tin.
- 2Mix together wholemeal flour and sugar and make a well in the centre.
- 3Mix together milk, egg and melted butter and stir well to combine.
- 4Fold milk mixture into flour until just combined.
- 5Fold through plums and place mixture 3/4 full in muffin holes.
- 6Cook for 15 minutes or until golden brown.
