Red Plum Wholemeal Muffins

Ingredients

  • 1 cup wholemeal self raising flour, sifted
  • 2 tbsp. soft brown sugar
  • 1/2 cup low fat milk
  • 1 large egg
  • 2 heaped tbsp. light margarine spread, melted 30 sec in microwave
  • 2 ripe plum, cut into bite size
  • 1/4 cup Greek Yoghurt

Method

  1. 1Preheat oven to 180 degrees (160 degrees fan forced). Place 8 muffin patties into a muffin tin.
  2. 2Mix together wholemeal flour and sugar and make a well in the centre.
  3. 3Mix together milk, egg and melted butter and stir well to combine.
  4. 4Fold milk mixture into flour until just combined.
  5. 5Fold through plums and place mixture 3/4 full in muffin holes.
  6. 6Cook for 15 minutes or until golden brown.
