Sautéed Zucchini & Leek

What a great way to have vegetables on the side. Serve this at a BBQ, with a roast or any grilled meat.

Ingredients

  • 10g butter, no added salt
  • ½ leek, washed and sliced
  • 2 zucchinis, sliced long
  • 2 cloves garlic, crushed
  • 10g crumbled feta
  • Sprinkle oregano
  • Salt and pepper to taste

Method

  1. 1Heat a non-stick frypan with butter and sauté the leek approx 3-4 minutes on low- medium heat, or until softened. Add zucchini and continue to sauté a few more minutes. Sprinkle with oregano then add the garlic and season with salt and pepper. Cook a further minute then serve.
