They make the perfect side to any BBQ meat, or any meal for that matter. The taste the BBQ gives these potatoes is well worth the little effort involved.
Ingredients
- 8 baby chat potatoes
- 1 tsp. olive oil
- 2 tbsp. fresh mint
- Sprinkle of fresh rosemary
- Sea Salt
Method
- Pearce each potato with a skewer twice.
- Place all on a plate and microwave until nearly cooked, approx 10 minutes. Take out and set aside until you are ready to BBQ, this can be done ahead of time.
- Place potatoes in a bowl and when ready to grill drizzle some olive oil over, mix with a spoon so all potatoes are coated.
- Heat BBQ on med heat and grill potatoes for 5-10 minutes, turning.
- Serve in a bowl with freshly chopped mint and rosemary then sea salt.
