Sultana and Oat Loaf

Ingredients

  • 2 cups self raising flour
  • 2 eggs
  • 1/2 cup low fat milk
  • 30g butter
  • ⅓ cup sultanas or raisons
  • ⅓ cup rolled oats
  • ⅓ cup All Bran or similar sticks
  • 1/4 cup natural or greek yoghurt
  • 2 tbsp. crushed walnuts

Method

  1. 1Pre heat oven to 180C.
  2. 2Sift flour in bowl. Melt butter and mix in eggs and milk and mix well to combine.
  3. 3Add milk mixture to flour, yoghurt and mix well to combine.
  4. 4Add sultanas, rolled oats, all bran and walnuts and mix in well. This will be a very dense batter.
  5. 5Sprinkle a little more sultanas on the top of the bread prior to baking if you like.
  6. 6Place in lightly greased and lined loaf tin and cook for 25-30 minutes or until risen.
  7. 7Slice and serve immediately.
