Sweet Potato Shepherds Pie
Sweet Potato give the dish a different dimension which we think you'll love, and makes it a perfect winter warmer. Sweet potatoes have more nutrition than normal potatoes. They are known insome parts of the world as Kumera or Yams. This recipe is low fat, low sodium, low sugar and a good source of protein.

Ingredients
- 500g lamb mince, low fat
- 2 tbsp. olive oil
- 1 large onion, diced
- 4 garlic cloves, crushed
- 2 tbsp Worcestershire sauce
- 2 celery stalks, sliced
- 2 carrots, sliced
- 1 can diced tomatoes
- 1 cup corn kernels
- 1 cup beef stock
- 1 tbsp. dried oregano
- 1 tsp. each thyme & rosemary
- Handful parsley, chopped
- Cracked pepper
- * Topping:
- 500g sweet potato, peeled and cut
- 1/4 cup low fat milk
- 1 tbsp. butter
- Salt and pepper to taste
Method
- 1Steam your potatoes until soft. Mash with milk and butter until smooth, season with salt and pepper.
- 2In pot or pan, heat your olive oil and saute onions until softened, around 5-8 minutes.
- 3Add carrot, celery, continuing to cook for a further 5 minutes.
- 4Now add lamb mince, cooking this through.
- 5Season with thyme, rosemary, garlic, oregano, pepper and Worcestershire sauce.
- 6Once all cooked, add canned tomatoes, stock, corn and parsley. Simmer for 30 minutes.
- 7Preheat oven 180C (350F)
- 8Add meat mixture to an oven proof dish and top with sweet potato mixture.
- 9Bake in oven for 20-30 minutes until bubbling.
- 10Serve with steamed vegetables or peas.
