Ingredients

  • 1 wholemeal english muffin, halved
  • 1 tbsp. tomato paste or pizza sauce
  • 1 tbsp. reduced fat grated cheese
  • 1 tbsp. red capsicum strips
  • 1 mushroom, chopped
  • 1 tbsp. sliced onion
  • 1 tbsp. sliced black kalamata olives
  • Sprinkle of herbs

Method

  1. 1Preheat oven to 180C.
  2. 2Place muffins on an oven tray lined with baking paper. Spread pizza sauce on each muffin
  3. 3Sprinkle low fat cheese over each muffin and top each with capsicum, mushroom, onion and olives then sprinkle with herbs.
  4. 4Bake in oven for 10 minutes or until browned.
  5. 5Serve immediately.
