Vegetarian Pizza Muffins

Ingredients
- 1 wholemeal english muffin, halved
- 1 tbsp. tomato paste or pizza sauce
- 1 tbsp. reduced fat grated cheese
- 1 tbsp. red capsicum strips
- 1 mushroom, chopped
- 1 tbsp. sliced onion
- 1 tbsp. sliced black kalamata olives
- Sprinkle of herbs
Method
- 1Preheat oven to 180C.
- 2Place muffins on an oven tray lined with baking paper. Spread pizza sauce on each muffin
- 3Sprinkle low fat cheese over each muffin and top each with capsicum, mushroom, onion and olives then sprinkle with herbs.
- 4Bake in oven for 10 minutes or until browned.
- 5Serve immediately.
