Zucchini & Chorizo Slice

This 150 calories per serve recipe is a different version to the traditional zucchini slice, with loads of extra flavour.

Ingredients

  • 1 onion
  • 1 clove garlic, crushed
  • 2 large zucchini
  • ½ red capsicum
  • 4 eggs
  • ½ cup self-raising flour
  • ¼ cup milk
  • 1 cup grated cheese, reduced fat
  • ¼ (40g) chorizo, sliced thinly
  • Sprinkle oregano
  • Sprinkle smoked paprika
  • 1 tsp. Dijon mustard
  • Cooking spray

Method

  1. 1In a non-stick frypan cook your sliced chorizo. Set aside. Preheat oven to 180C.
  2. 2In a food processor (or you can manually grate) grate you zucchini, capsicum, onion and place into a large mixing bowl. Add eggs, self-raising flour, milk, ½ the cheese, oregano, paprika and Dijon mustard and mix until all combined, season with salt and pepper.
  3. 3Spray an oven proof dish with cooking spray and pour mixture into dish. Even add on top the sliced chorizo then remaining cheese.
  4. 4Bake in oven for 30 minutes or until set in centre. Serve with side salad.
