Ingredients
- 1 tbsp. olive oil
- 1 onion, sliced
- 2 cloves garlic, crushed
- 1 tbsp. ginger, crushed
- 2 tbsp. indian curry paste (or you can use curry powder)
- 400g lean beef, diced
- 1 can chopped tomatoes
- 1 cup beef stock, salt reduced
- 1 cup Coconut milk, light (250ml)
- 2 potatoes, cut into chunks
- 2 tbsp. fresh parsley, chopped
Method
- 1Heat oil in a large frying pan. Add onion and cook over medium heat until softened. Add garlic and ginger. Cook for 2-3 minutes. Stir in curry powder and cook for 1 minute.
- 2Add beef. Cook, stirring over a high heat, until meat is well coated with spice mixture and browned all over.
- 3Add tomatoes and stock. Cover and simmer for 1-1¼ hours, or until meat is tender.
- 4Add coconut milk and potatoes. Cook for 5 minutes.
- 5Serve sprinkled with parsley and with warmed naan or pita bread.
