Ingredients

  • 1 tbsp. olive oil
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 1 tbsp. ginger, crushed
  • 2 tbsp. indian curry paste (or you can use curry powder)
  • 400g lean beef, diced
  • 1 can chopped tomatoes
  • 1 cup beef stock, salt reduced
  • 1 cup Coconut milk, light (250ml)
  • 2 potatoes, cut into chunks
  • 2 tbsp. fresh parsley, chopped

Method

  1. 1Heat oil in a large frying pan. Add onion and cook over medium heat until softened. Add garlic and ginger. Cook for 2-3 minutes. Stir in curry powder and cook for 1 minute.
  2. 2Add beef. Cook, stirring over a high heat, until meat is well coated with spice mixture and browned all over.
  3. 3Add tomatoes and stock. Cover and simmer for 1-1¼ hours, or until meat is tender.
  4. 4Add coconut milk and potatoes. Cook for 5 minutes.
  5. 5Serve sprinkled with parsley and with warmed naan or pita bread.
