Creamy Tangy Coleslaw
We have used Chinese cabbage as it is not as hard as normal cabbage and gives a lovely light salad texture. Whilst this is not low fat due to us using Thommy Mayonnaise if you are concerned about fat levels then swap with your favourite low fat mayo. We think Thommy has a great creamy taste and you only need to use a little of it to get that flavour.

Ingredients
- 2 cups shredded wombok/chinese cabbage
- 1 large carrot, grated
- 1 stick celery, diced
- ¼ onion, finely sliced
- 1 tbsp. mayonnaise (we used Thommy Mayo)
- 1 tsp. Dijon mustard
- 1 tsp. white wine vinegar
- S & P to taste
Method
- 1Shred or finely slice cabbage and place in bowl.
- 2Add carrot, celery and onion to bowl.
- 3Mix mayonnaise and mustard together in a small bowl and add to salad in bowl.
- 4Drizzle the white wine vinegar over salad and season with S & P.
