Ingredients
- 1 cup plain flour
- 1 cup low fat milk
- 1 egg
- 1 small tub (250g) low fat ricotta cheese
- 2 oranges juiced
- 2 tbsp. sultanas
- 1 tbsp. honey
- 1 tbsp. cornflour mixed with a little cold water
- Cooking spray
Method
- 1Sift flour into a mixing bowl. Add egg and milk then whisk until well combined. Set aside in fridge until ready to use. This will relax the batter.
- 2Squeeze fresh oranges then add to a small pot, you can add the pulp as well. Drizzle in honey and simmer on low heat. After a minute add the cornflour/water mix to the orange juice and stir, this will thicken. Turn off heat and set aside.
- 3Heat a small-med non stick frypan and place 1/4 of the batter mixture into pan. When you see a bubble or two flip over, when cooked place on plate.
- 4Mix ricotta and sultanas together in a small bowl and place in between each crepe, then fold over.
- 5Drizzle the orange sauce over the crepe.
- 6Serve immediately and enjoy!
