Crepes Ricotta & Orange Honey Sauce

Ingredients

  • 1 cup plain flour
  • 1 cup low fat milk
  • 1 egg
  • 1 small tub (250g) low fat ricotta cheese
  • 2 oranges juiced
  • 2 tbsp. sultanas
  • 1 tbsp. honey
  • 1 tbsp. cornflour mixed with a little cold water
  • Cooking spray

Method

  1. 1Sift flour into a mixing bowl. Add egg and milk then whisk until well combined. Set aside in fridge until ready to use. This will relax the batter.
  2. 2Squeeze fresh oranges then add to a small pot, you can add the pulp as well. Drizzle in honey and simmer on low heat. After a minute add the cornflour/water mix to the orange juice and stir, this will thicken. Turn off heat and set aside.
  3. 3Heat a small-med non stick frypan and place 1/4 of the batter mixture into pan. When you see a bubble or two flip over, when cooked place on plate.
  4. 4Mix ricotta and sultanas together in a small bowl and place in between each crepe, then fold over.
  5. 5Drizzle the orange sauce over the crepe.
  6. 6Serve immediately and enjoy!
