The crisp, or crumble topping, sits above blueberries and has a wonderful crunch and hint of cinnamon. This recipe is a great way to get more fruit into your diet and can be served with a dollop of natural yoghurt, fresh cream or even ice cream (if you're not watching your weight too closely).
Ingredients
- 2 Granny Smith Apples, cored and cut in half
- 1 tbsp. maple syrup
- Pinch cinnamon
- ½ cup rolled oats
- 1 tbsp. brown sugar
- 1 tbsp. plain flour
- 1 tbsp. light margarine spread, melted 15 sec microwave
- ¼ cup frozen blueberries
Method
- Preheat oven to 200C (400F)
- Core and cut your apples in half. With a small melon baller cut out the centre of the apple so the blueberries can sit in. Drizzle maple syrup on apples and place blueberries evenly in the 4 halves.
- In a small bowl, place oats, cinnamon sugar, flour and margarine spread, mix with a spoon.
- Pat tightly over each apple and bake for 40 mins in oven.
- Serve with Greek yoghurt.
