The health benefits of tuna are too many and varied to list here, but research has shown that it can help prevent obesity. Mushrooms are known as meat for vegetarians, and have virtually no fat.
Ingredients
- 100g dry fettuccini
- 200g tuna, spring water (approx 250g can drained)
- 1/2 onion, sliced
- 1 clove garlic, crushed
- 8 cup mushrooms, sliced
- 1 cup light & creamy evaporative milk
- 1 tsp seeded mustard
- 1 tsp dijon mustard
- 1/4 cup water
- 2 tbsp. chopped flat leaf parsley
- Cooking spray
- S & P to taste
Method
- Cook pasta as per instructions do not overcook, slightly undercook, drain and set aside.
- In a non stick frypan spray cooking spray and saute the onion until softened, around 5 mins, add a little water if needed.
- Add mushrooms and stir fry for 1 min, then add garlic and a little water.
- Now add the evaporated milk and simmer for a further 2 mins. Season with lots of pepper (to taste) then add the pasta, seeded mustard, dijon mustard parsley and tuna and gently stir until fully incorporated, add some water if needed.
- Serve with a side salad.
