If you are watching your sugar levels you can omit the honey and increase the other dressing ingredients, however the honey really compliments the carrots.

French Carrot Salad

Ingredients

  • 4 carrots
  • 2 tsp. dijon mustard
  • 2 tbsp. honey, warmed
  • Handful parsley, chopped
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. olive oil
  • 2 spring onions, sliced
  • 1 stick celery, sliced finely
  • Salt and pepper to taste

Method

  1. 1Place your carrots into a food processer with the grating attachment otherwise use a normal grater. Once done place into a large mixing bowl. Add the parsley, celery and spring onions to the carrots.Â
  2. 2In a small dish place mustard, honey, vinegar, olive oil and mix with a little whisk until all incorporated.
  3. 3Pour dressing over the carrots, season with salt and pepper and mix thoroughly.
  4. 4Serve immediately.
