Greek Beef Salad
The flavours of garlic, feta, lemon, oregano and a touch of chilli give this a lovely Greek/Mediterranean flavour. This recipe is low sodium, low sugar, low carb and high protein.

Ingredients
- 300g rump steak or your favourite cut, fully trimmed of fat
- 6 cherry tomatoes
- 1 tbsp. olive oil
- 1/2 lemon, juiced
- 2 cloves garlic, crushed
- 4 cup or 8 button mushroom, sliced
- 1 tbsp. feta
- 1 small cucumber, sliced
- 2 handfuls lettuce
- 1 chilli, deseeded and sliced
- Sprinkle Oregano
Method
- 1Drizzle a tsp. of olive oil over the steak, rub 1 clove garlic crushed and a small sprinkle of oregano. Season with salt and pepper.
- 2Heat BBQ or griddle pan on high for 5 mins.Â
- 3Cook steak 3 - 4 mins each side.
- 4Meanwhile, assemble your salad ingredients in a bowl. Drizzle remaining olive oil, the other clove of crushed garlic, a sprinkle of oregano, squeeze of lemon and sliced chilli. Mix with tongs so salad ingredients are all coated.
- 5Take beef off heat, place on a plate and cover with foil, let rest for 5 mins. Slice into strips, then place with salad.
