Greek Salad

This is a basic greek salad which tastes fantastic, summery and fresh. Use this as a side with grilled fish, chicken or meat. Use very good quality feta and olive oil. This recipe is low sugar, low sodium, low saturated fat and low carb.

Ingredients

  • 1 large tomato or 2 smaller tomatoes, diced
  • 1/4 capsicum, chopped
  • 1 lebanese cucumber, chopped
  • 1/4 red onion, sliced
  • 30g good quality feta, chopped or crumbled
  • 2 black pitted olives
  • Drizzle olive oil
  • Drizzle balsamic vinegar
  • Sprinkle oregano
  • S & P to taste

Method

  1. 1Place all ingredients into a bowl and mix with tongs.
  2. 2Serve on 2 plates with grilled chicken, fish or beef.
