Greek Salad
This is a basic greek salad which tastes fantastic, summery and fresh. Use this as a side with grilled fish, chicken or meat. Use very good quality feta and olive oil. This recipe is low sugar, low sodium, low saturated fat and low carb.

Ingredients
- 1 large tomato or 2 smaller tomatoes, diced
- 1/4 capsicum, chopped
- 1 lebanese cucumber, chopped
- 1/4 red onion, sliced
- 30g good quality feta, chopped or crumbled
- 2 black pitted olives
- Drizzle olive oil
- Drizzle balsamic vinegar
- Sprinkle oregano
- S & P to taste
Method
- 1Place all ingredients into a bowl and mix with tongs.
- 2Serve on 2 plates with grilled chicken, fish or beef.
