Grilled Chicken & Honey Citrus Salad
The dressing in this has a real taste of spring & summer about it.

Ingredients
- 2 small chicken breasts, no skin
- 100g (3.5oz or small bag) lettuce
- ½ punnet cherry tomatoes, approx 10
- 1 cucumber sliced
- ½ avocado, sliced
- ½ carrot finely sliced or grated
- 10 manderin segments (we used from can as not in season)
- S & P to taste
- * Dressing
- ½ cup freshly squeezed orange juice
- ¼ cup freshly squeezed lemon juice
- 2 tbsp. honey
Method
- 1Place chicken breast between 2 sheets of non stick baking paper, pound with a rolling pin or mallet so the chicken is all one thickness, this will ensure it cooks through quickly.
- 2Spray with cooking spray on both sides. Heat BBQ or griddle pan on med - high heat. Cook chicken around 4-5 minutes each side, depending on the BBQ. Once cooked, take off heat, place on a plate and cover with foil, this will allow the chicken to rest.
- 3Now place lettuce, halved tomatoes, grated carrot, sliced cucumber onto plate. Top with manderin segments around the plate.
- 4To make dressing, place all ingredients in a bowl, whisk, or a jar and shake well.
- 5Remove foil on chicken, place on a board an slice each breast on an angle into 4 or 5 slices. Place on top of salad. Season with S & P.
- 6Drizzle dressing all over ingredients.
