Ingredients
- 100g mixed lettuce
- 1 cucumber, chopped
- 8 cherry tomatoes, halved
- 1/2 red capsicum, chopped
- 1/4 red/purple onion, sliced
- 30g black pitted olives
- 50g feta cheese, (Dodoni)
- ¼ tsp. dried thyme
- 1 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- Cracked pepper
Method
- 1Place lettuce into 2 bowls.
- 2Layer all ingredients on top of the lettuce.
- 3Season with the thyme and cracked pepper.
- 4Mix around, drizzle oil and vinegar.
