Mexican Beef & Bean Pizza
The fat content comes from mainly the avocado and light sour cream which you can omit both if you like. This is a great pizza to enjoy as it incoporates legumes which are so healthy for you.

Ingredients
- 125g lean minced beef
- 1/4 onion, diced
- 1/4 cup red kidney beans
- 2 tsp. pizza sauce
- 2 button mushrooms, sliced
- 1 pita pocket, wholemeal, ‘light'
- 2 tsp. taco seasoning mix, salt reduced
- 1/4 cup water
- 1/4 avocado, sliced
- 2 tsp. sour cream, light
- 2 tsp. olive oil
Method
- 1Preheat oven 200C (400F).
- 2Lay your pita pocket onto an oven tray which has been lined with baking paper.
- 3Spread 1 tbsp. pizza sauce over base.
- 4Heat a small non-stick frypan, spray cooking spray and sauté onion for 5 mins on med heat. Add your beef mince and cook until browned. Add kidney beans, water, taco seasoning mix, mushrooms and simmer on low heat for a couple of minutes.
- 5Take off heat; lay out on pita pocket evenly.
- 6Bake in oven for 10 mins.
- 7Serve immediately with sliced avocado and a dollop of light sour cream.
