Mini Mexican Pizza
Although this is a mini pizza, it is a reasonable sized dish for lunches, snacks (especially for kids) or entertaining.

Ingredients
- 1 mini pizza base – in the supermarket fridge section or pita bread
- 100g Vegetarian Chilli Mix
- 1 tbsp. pizza sauce
- 1 tbsp. light sour cream
- Drizzle of sweet chilli sauce
- 1 tbsp. reduced fat cheese
Method
- 1Preheat oven to 190c.
- 2Place 1 pizza base on oven tray lined with baking paper
- 3Spread pizza sauce over base of pizza.
- 4Spread Vegetarian Chilli Mix over the base.
- 5Sprinkle Cheese on top and bake in oven for 15 mins.
- 6Once cooked take out and drizzle sour cream and sweet chilli sauce on top.
