Mini Potato and Rosemary Pizza

Ingredients

  • 1 mini pizza base – in the supermarket fridge section or pita bread
  • 1 tbsp. pizza sauce
  • 1 tbsp. caramelized onions
  • Drizzle of olive oil
  • 1 potato, sliced very thinly, skin on
  • Sprinkle of rosemary
  • 1 garlic, crushed
  • 1 tbsp. reduced fat cheese

Method

  1. 1Preheat oven to 190C.
  2. 2Place 1 pizza base on oven tray lined with baking paper
  3. 3Slice the potato very thinly.
  4. 4Dribble a tiny amount of olive oil on base, spread with teaspoon. Spread crushed garlic on top.
  5. 5Spread pizza sauce over base of pizza.
  6. 6Spoon 1 tablespoon of caramelized onion.
  7. 7Layer potato on the base.
  8. 8Sprinkle cheese on top of potato and then some rosemary. Bake in oven for 15 min.
