Mini Potato and Rosemary Pizza

Ingredients
- 1 mini pizza base – in the supermarket fridge section or pita bread
- 1 tbsp. pizza sauce
- 1 tbsp. caramelized onions
- Drizzle of olive oil
- 1 potato, sliced very thinly, skin on
- Sprinkle of rosemary
- 1 garlic, crushed
- 1 tbsp. reduced fat cheese
Method
- 1Preheat oven to 190C.
- 2Place 1 pizza base on oven tray lined with baking paper
- 3Slice the potato very thinly.
- 4Dribble a tiny amount of olive oil on base, spread with teaspoon. Spread crushed garlic on top.
- 5Spread pizza sauce over base of pizza.
- 6Spoon 1 tablespoon of caramelized onion.
- 7Layer potato on the base.
- 8Sprinkle cheese on top of potato and then some rosemary. Bake in oven for 15 min.
