Passionfruit Puddings

Ingredients

  • 1/2 cup SR Flour
  • 1 egg
  • 2 tbsp. low fat milk
  • 1 tbsp. (heaped) light marg spread or olive oil
  • 2 tsp. sugar or honey
  • 2 passionfruit, pulp only (or 1 x canned)
  • 1/4 cup fresh orange juice
  • 1/2 tsp. cornflour

Method

  1. 1Preheat oven 180C.
  2. 2Layout 4 patty pans into a muffin tin.
  3. 3In a mixing bowl sift flour. 
  4. 4Heat marg spread for 20 seconds in microwave.
  5. 5Add egg to flour with milk and marg.  Add sugar or honey and mix with a whisk for 1 minute.
  6. 6Divide mixture in the 4 patty pans and bake for 15 mins, checking after 10 mins.
  7. 7Meanwhile, heat in a small pot the pulp and OJ, until starts to bubble then add the cornflour mixed with 1 tbsp. OJ.  Stir until thickens.
  8. 8Pour over puddings, option to serve with low fat custard.
