Passionfruit Puddings

Ingredients
- 1/2 cup SR Flour
- 1 egg
- 2 tbsp. low fat milk
- 1 tbsp. (heaped) light marg spread or olive oil
- 2 tsp. sugar or honey
- 2 passionfruit, pulp only (or 1 x canned)
- 1/4 cup fresh orange juice
- 1/2 tsp. cornflour
Method
- 1Preheat oven 180C.
- 2Layout 4 patty pans into a muffin tin.
- 3In a mixing bowl sift flour.
- 4Heat marg spread for 20 seconds in microwave.
- 5Add egg to flour with milk and marg. Add sugar or honey and mix with a whisk for 1 minute.
- 6Divide mixture in the 4 patty pans and bake for 15 mins, checking after 10 mins.
- 7Meanwhile, heat in a small pot the pulp and OJ, until starts to bubble then add the cornflour mixed with 1 tbsp. OJ. Stir until thickens.
- 8Pour over puddings, option to serve with low fat custard.
