Waldorf Salad
For added flavour or variety, you can add sliced pear or grapes to this recipe. It is also a great salad for serving with grilled chicken breast. If you don't like the tartness of Greek yoghurt, either use natural yoghurt instead, or just add ½ tsp sugar to the Greek yoghurt.

Ingredients
- * Salad
- 1 stick celery, sliced
- 1 red apple, chopped
- 1 small baby cos lettuce, chopped
- 1 tbsp. chopped walnuts
- 1 tbsp. slivered almonds
- 1 tbsp. sultanas (optional)
- * Dressing
- 3 tbsp. greek yoghurt, light
- 1/2 lemon, juiced
- Salt and pepper to taste
Method
- 1Place chopped ingredients in a bowl
- 2In a small bowl, mix the dressing ingredients and pour into salad ingredients bowl. Mix until everything has been coated.
- 3Divide mixture into 2 bowls.
- 4Serve immediately.
