Yoghurt Persimmon & Boysenberry

Ingredients

  • 275g natural yogurt (reduced fat)
  • 10g vanilla bean pod
  • 80g boysenberries
  • 180g persimmon (approx 1 persimmon)

Method

  1. 1Open vanilla pod and remove vanilla bean seeds, mix with natural yogurt.
  2. 2Cut persimmon in half and remove the seeds, set aside
  3. 3Using small “shot” glasses place yogurt on the bottom, topping with berries then persimmon then more yogurt and repeat. Garnish with extra persimmon and berries.
  4. 4Serve immediately.
