Mushrooms are considered by many to be a weight loss diet superfood. They are low in fat and high in fibre so they keep you feeling fuller longer. This recipe takes this weight loss superfood and puts it in the form of a burger.
Because the primary sources of fat in this recipe are from avocado and olive oil, it is low in saturated fats and therefore heart healthy.
Ingredients
- 2 Wholemeal Large Rolls
- 2 Large field mushrooms
- 5g olive oil
- 1 large tomato sliced thickly
- 50g avocado, sliced
- 20g tomato chutney
- 1 clove garlic crushed
- 30g lettuce
- 30g capsicum strips (from jar)
- Salt and pepper to taste
- Sprinkle Oregano
Method
- Preheat oven 200c.
- Preheat non stick griddle pan or frying pan.
- Place ½ olive oil in pan, then once heated place mushrooms. Cook side down for 4 mins, then turnover and cook other side for 4 more mins.
- Take off heat and place on a lined baking tray, face up, drizzle rest of olive oil, sprinkle some oregano over and bake for 10 mins. Take out of oven, now put garlic over, season with salt and pepper and bake for a further 5 mins.
- Meanwhile toast your rolls to your liking.
- Dress rolls with lettuce, tomato, capsicum strips, avocado and tomato relish or chutney.
