As a guide, serve about 2-3 mushrooms per person as a side. You can add other herbs as well, such as rosemary, oregano or even a little chopped mint.
This recipe is low saturated fat, low carb, low sugar, and low sodium.
Ingredients
- 250g small mushrooms
- 2 tbsp. olive oil
- 3 cloves garlic, crushed
- 10g chopped parsley
- 2 tbsp. lemon juice
- Salt and pepper to taste
Method
- Preheat oven 180C.
- Place all your ingredients into a mixing bowl and season with salt and pepper. Mix so all coated then place into a small baking dish. Bake for 15 minutes or until cooked. Serve with grilled fish, chicken or meat.
